Chicken Pie

Hi, this chicken pie is very easy to make and yummy too.

Here is the recipe

Ingredients:
Butter and oil (any one will do) -2 tbs
Onion chopped- 1
Garlic chopped finely-2 tsp or as per taste
Chicken breast cubed-2 breasts
Potato cubed-2
Carrot cubed-1
Broccoli cut-a small floret.
salt and pepper to taste.
Dill leaves-2 tbs
White sauce
Cream-1 can(170 gm)
Puff pastry
Egg for egg wash

Method:
Heat butter and oil.Saute the chicken and vegetables in order. You can add whatever vegetables you like . I added the dill leaves as I had some (the flavor was good). Add salt and pepper to taste. Cover and cook till the chicken and vegetables are tender. To make the white sauce, melt 3 tbs butter ,add 3 tbs flour stirring till the rawness of the flour is gone. Add 2 cups of milk little by little stirring so there are no lumps. Boil this to make thick sauce adding salt and pepper to taste . Add this sauce and cream to the chicken mixture. Pour in to a dish or individual dishes. Spread the puff pastry sheets on it and brush with beaten egg.  Preheat oven and bake for 30 to 35 minutes on 220 degree Celsius  or until the pastry is golden .(Please be aware that ovens differ)

Easy Donut Muffin Recipe


Here's an easy Muffin Recipe I found on Pinterest. It's originally from BudgetSavvyDiva.com . These Muffins  are really Nice and Soft. And the Coating of Sugar and Cinnamon makes it taste even more Better. I would recommend this to anyone who's craving some Sugar. ;)



Ingredients: (For 6 Servings)

Dough
1/2 cup Milk
1 cup All Purpose Flour
1/4 cup melted Butter
1/2 cup grounded sugar
1/2 teaspoon Vanilla Extract
1 teaspoon Baking powder
1/4 teaspoon Grounded Nutmeg

Topping
1/2 cup Sugar - not grounded
1/4 cup melted butter
1 teaspoon Cinnamon Powder

Steps:
  1. Preheat oven to 200 degree Celsius. ( or  375 Fahrenheit. This was the temperature in the original recipe)
  2. In a large Bowl Mix 1/2 cup of Sugar, 1/4 cup of Butter and nutmeg powder.
  3. Add into the bowl 1/2 teaspoon vanilla extract, 1 teaspoon baking powder, milk and Flour.
  4. Mix contents until it becomes smooth.
  5. Place the batter into a greased Muffin tin.
  6. Bake for 20 minutes ( or 15 minutes - 375 Fahrenheit) until the top becomes Golden Brown.
  7. In a small bowl mix 1/2 cup of Sugar and Cinnamon for the topping.
  8. Dip the Muffins in the melted Butter then dip it into the Sugar and Cinnamon Mix.
  9. Enjoy!! :)

Potato and Chicken Sausage Salad





Here's a quick recipe for a 'Potato and Chicken Sausage Salad' that my Sister made. She says "It's form a potato lover, to all the potato lovers out there" ;)


What you'll Need:
Boiled Potato 
Chicken Sausage (Boiled/cooked)
Basil 
Chopped Spring Onion
Mayonnaise
Salt & Pepper


Steps:
1. Cut the potato into small cubes
2. Cut the sausage into smaller pieces
3. Mix all the ingredients together in a bowl
4. You can heat it if you want or Enjoy it as it is! :)

Mortadella and Mint Crackers



I was originally going to make a Chicken Mortadella Sandwich, but we were out of bread. So instead I made these using Ritz Crackers !!

Ingredients:
1. Ritz Crackers
2. Chicken Mortadella Slices
3. Mayonnaise
4. Mint Leaves

Steps:
1. On each cracker put a drop of Mayonnaise.
2. Fold a mortadella slice into four and press it gently to prevent it from opening back.
3. Place the Mortadella on the cracker and put a mint leaf or two on top of the mortadella.

South Indian Breakfast - Upma

Hi, here is a recipe for Breakfast.




INGREDIENTS:

Oil : 2 tbs
Mustard seeds:2 tsp
Urad dhal :1 tsp (optional)
Curry leaves : few
Onion chopped : 1
Geen chilly : 1 or 2 (more or less as needed)
Ginger chopped  :1 tsp
Carrot grated : 1 small (optional)
Peas : 1/2 cup (optional)
Tomato : 1 small, chopped
Cashew or peanuts (optional): few
Semolina :1 cup
Water :2 cups
Salt to taste
Ghee :2 tbs (optional)

METHOD:

Heat Oil , add Mustard seeds.When it stops spluttering, add Urad dhal ,Curry leaves , chopped Onion, Green Chilly,  chopped  Ginger , Peas and Carrot . Saute till Onion is transparent . Add Cashew nut and Tomato . Saute till Tomatoes   become mushy .Pour 2 cups of Water  and boil .Add Salt . Lower flame and add Semolina .Add Ghee and stir once.Keep on low fire  covered  for few minutes.Serve hot.

Orange Muffins







Ingredients (For 12 servings)

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 1 tablespoon grated orange zest
  • 2/3 cup orange juice
  • 1/2 cup melted butter
  • 2 eggs
  • 1/2 cup ground walnuts (optional)
  • 1 tablespoon melted butter
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon

Directions 

  1. Combine flour, baking powder, baking soda, salt, white sugar and grated orange peel. Stir in orange juice, 1/2 cup melted butter, eggs and chopped nuts.
  2. Pour into 12 muffin cups.
  3. Blend 1 tablespoon melted margarine, 1/4 cup brown sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Serve hot.
